Can I hide the due date from students?

Yes you can. To hide the due date, go to the assignments page -> click "Edit Details" -> then change "Show assignment end date" to "No".

When the due date is hidden, student can not see when the assignment will no longer be available to them. This feature is usually used for extra credit or practice assignments that do not actually have a due date.
